Trûnk de Noël

Turn this traditional dessert on it's side and you come up with a remixed classic!  Garnished with sugared rosemary, fresh cranberries and meringue mushrooms and your gathering is complete!

Cake:
1 cup flour
2 tsp. baking powder
1 c. sugar
1/2 c. cocoa powder
4 oz. Special Dark Chocolate Chips, melted and cooled
8 eggs
1/2 c. mayonnaise
2 tsp. vanilla extract

Filling & Frosting:
8 egg whites
2 c. sugar
1 tbsp. vanilla bean paste
3 c. (6 sticks) unsalted butter (room temperature)
8 oz. Special Dark Chocolate Chips, melted & cooled (for bark)
1/4 c. malted milk powder (for filling)
5 oz.  box Whoppers, crushed (for filling)

Preheat the oven to 350 degrees and butter two half-sheet pans, then line the pans the long way with parchment paper leaving an overhang on each end.  Butter the parchment as well - set aside.

In the bowl of an electric mixer fitted with the paddle attachment add sugar and mayonnaise, beating for one minute to dissolve sugar.  Add eggs, one at a time until each one is incorporated - then add vanilla and melted chocolate.  Add flour, cocoa and baking powder - turn mixer on low speed until combined, scraping bowl if necessary.  Divide batter evenly between the two half-sheet pans and bake for 15-18 minutes.  Remove from oven and allow to cool completely.  Place parchment on top of each cake and place a second half-sheet pan over, then flip cake out.  Peel off parchment liner when ready to frost.

To make the filling/frosting, in the bowl of your mixer place egg whites and sugar.  Set the bowl over a saucepan of simmering water and whisk by hand until the sugar is dissolved.  I test this by placing my forefinger and thumb into the mixture and feeling it between them for sugar granules.  When you notice they are gone are barely there, remove from heat and place into mixer fitted with whisk attachment.  Add the vanilla bean paste and beat on high speed until the egg whites become firm, roughly five minutes.  With the machine still running, drop the room temperature butter by tablespoons into the egg whites, slowly incorporating the butter in.  Beat the mixture until it comes together, it will completely change the look and texture - looking like buttercream icing.

Scoop out two cups of the icing into a small bowl and whisk in the 4 oz. melted-cooled chocolate by hand, cover and set aside.

Add malted milk powder and crushed Whoppers (which I crushed in the food processor) to the remaining buttercream and mix to combine well.  Remove from mixer and divide evenly between two cake layers, spreading the malted icing over them.  Cut cakes in half lengthwise and gently roll one up over itself the long way.  The cake may crack/break - this is okay.  Take the first rolled cake and attach it to the end of the other half, rolling that cake up and around the first roll.  Continue to do this until you have rolled all four layers together.  Place cake flat side up onto serving plate, then using the chocolate buttercream frost the outside of the trunk - frosting it from the bottom up to create a bark effect.

Cover with plastic wrap and chill for at least six hours, or overnight if possible.  Garnish it with fresh cranberries, sugared rosemary and meringue mushrooms.

Buffalo Wing Dip


I am somewhat obsessed with the taste of buffalo wings. I serve this with home-made Doritos Buffalo Wing/Ranch chips and celery.  I use the canned chicken as it adds a nice, salty element and the chicken is tender which is what this dip needs.  You can mix this together a day or two before and then bake in a 9" round cake pan or oven-proof dish of your choosing.

16 oz. container of cream cheese
1 - 4 or 5 oz. container of crumbled blue cheese
1 - 12 oz. can of white chicken, drained
1/2 cup blue cheese dressing or ranch dressing
1/4 cup buffalo wing sauce (I use regular, you can use hot if you like)

Put all ingredients together in the bowl of an electric mixer and combine using the flat beater attachment. Place into an oven safe dish and bake at 350 for 20 minutes. Serve and enjoy!

Savory Sweet Potatoes with Herbed Goat Cheese & Sage

Why not take the proverbial SWEET potato and make it savory?  By mixing mashed sweet potatoes with herbed goat cheese and fresh sage, then throwing it back in the oven to mix and mingle creates an amazing Autumn or Winter side dish.  Sweet potatoes can be cooked and mashed ahead of time, just bring out roughly a half hour before mixing to take the chill off.

6 sweet potatoes, peeled, cubed and cooked - then mashed
2 - 4 oz. packages herbed goat cheese
4 tbsp. (half stick) unsalted butter, melted
2 tbsp. fresh sage, chopped

Place mashed sweet potatoes into the large work bowl of a food processor fitted with the metal blade attachment.  Crumble goat cheese in with sweet potatoes, then add sage and melted butter.  Place cover on and pulse until mixture is smooth.  Place into a greased 3-4 qt. baking dish, then bake in a 350 degree oven for 30 minutes if the potatoes are freshly mashed.  If the potatoes were mashed a day before, then bake for one hour.  ALTERNATIVELY you can place a mixture of buttered bread crumbs on top before placing into the oven to add texture.  Remove from oven and let rest for ten minutes.  Enjoy!

Spicy Artichoke Dip

I love to take a classic and put a twist on it, here I took my traditional artichoke dip recipe and added a can of water chestnuts and mild green chiles to it - giving it cruch and a kick!  Super simple, but I do use my mini Cuisinart to chop up the artichokes and water chestnuts so the dip has good consistency.

1 1/2 c. Real Mayonnaise

1 c. Parmesan cheese, grated
1 (14 oz.) can artichoke hearts, drained and chopped
1 (4 oz.) can chopped green chilies, drained
1 (6 oz.) can water chestnuts, drained ad chopped
2 tbsp. chopped green onions
2 garlic cloves, minced

Mix all ingredients together in an oven-safe dish. Bake at 350 degrees for 30 minutes or until lightly browned.

Roasted Garlic Hummus

There is nothing like a big plate of hummus set on the table surrounded by good friends.  The colors of this dish are rich and the flavors are bright.  This recipe is made simple with a food processor, this should not take more than a couple minutes to put together.  Tahini, an ingredient in hummus can usually be found in the ethnic aisle and is ground sesame seeds. I also topped it with black olives, preferably oil, packed Kalamata - but the key is that they are in oil and not brine.  The lemon is more for garnish and to inform the guest that lemon is in the dish, finally one bunch of flat-leaf parsley is chopped and sprinkled over the top.

2 cans chickpeas, drained and rinsed
1/2 cup fresh lemon juice (2-3 lemons)
1/2 cup tahini
1/3 c. olive oil
6 garlic cloves,roasted
1 tsp sea salt
1/2 tsp ground cumin
1 bunch flat-leaf parsley, chopped
1 lemon, wedged
1/2 cup brined-cured black olives in oil

Sausage Dip



My friend Barb made this for an event and it has been a staple for a lot of events at my home. I like it because it is hearty and easy. My sister like it because it requires no thinking. I have tried this is many types of sausage - chorizo, breakfast, hot, you name it. Here is the recipe - yes, it only has three ingredients.

1 bar of cream cheese
1 can of Ro-Tel
1/2 lb sausage, cooked and crumbled

Place all three ingredients into a saucepan on medium until it all comes together. Serve!

Roasted Eggplant Dip

Looking for an alternative use for the mighty, purple eggplant? Try this dip! It is so easy AND delicious. A great way to add this vegetable to your repetoire. I serve this usually with thinly sliced french bread that I have brushed with olive oil, salt & pepper then toasted to make them crunchy. Alternatively, you can use pita or salted corn chips - just try and use a mild, flavored chip as the base for this creamy dip.

1 eggplant - 1.5 -2 lbs.
3 garlic cloves, peeled and chopped
8 ounces creme fraiche (you can use sour cream, I prefer the flavor of creme fraiche)
Juice of 1 lemon
Salt & Pepper to taste

Heat broiler on high. With a fork, poke holes all over eggplant and place on a rimmed baking sheet or pan - turning every five minutes when the skin is blackened all over and the flesh is soft - roughly 20-25 minutes. Remove from the oven and let it rest for 20 minutes.

Peel off blackened skin from eggplant and discard. Place eggplant flesh in workbowl of a food processor, along with garlic, lemon juice and creme fraiche. Puree until smooth then season with salt and pepper to taste. Serve warm or room temperature with toasted bread or neutral chip.

Dirty Martini Dip

Who would have ever thought you could take a savory cocktail like this and turn it into a dip?  Simply amazing dip infused with vodka and your choice of filled, green olives (I prefer the blue cheese stuffed, yet the garlic stuffed are good also).  Please use good, quality olives such as the ones you find at an olive bar - I only use Dellalo products.

2 - 8 oz. package cream cheese, room temperature
1/4 c. mayonnaise
1/3 cup vodka
2/3 c. stuffed green olives, chopped
2 tsp. olive juice
4-6 scallions, sliced (white and green parts)

Place cream cheese, mayonnaise, vodka and olive juice into the workbowl of a food processor fitted with the metal blade attachment and process until combined.  Add chopped olives and scallions, pulsing until you reach desired consistency.  Place into refrigerator for 2-4 hours minimum for flavors to marry.  Serve with crostini or water crackers.


Country Corn Pudding

1 can sweet corn, drained
1 can creamed corn
8 tbsp. butter, halved
1 tsp. salt
2 cup 1/2 & 1/2
4 eggs
1 package from box of Butter Townhouse crackers, crushed

Melt 4 tbsp of the butter and whisk it in with the 1/2 & 1/2, eggs and salt.  Add drained corn and cream corn, whisking gently to combine.  Place into a 3 qt. baking dish that has been buttered.  Melt the remaining 4 tbsp of butter and mix together with the crackers.  Sprinkle cracker mixture on top of custard mixture, then bake at 350 degrees for 1.5 hours.  Remove from oven and let rest for 15 minutes before serving so custard sets.  Enjoy!

Turkey Pasta Salad with Bacon, Blue Cheese & Grapes

I wanted to create something that was in the complete opposite direction taste-wise as Thanksgiving or Christmas so you can use up the leftover turkey, and not feel like you need a side of dressing.  Here I paired it with some robust, steakhouse flavors.

1/2 lb pasta, penne or fusilli
3/4 cup sour cream
3/4 cup mayonnaise
1 tbsp. white or red wine vinegar
1 tsp. salt
1 tsp. coarse, ground pepper
1 bunch green onions, chopped
1-5 oz. container blue cheese crumbles
1 lb. thick-cut bacon, fried crisp and chopped
2 cups red, seedless grapes - halved
4-6 c shredded turkey

Boil pasta according to manufacturers instructions.  While pasta is cooking, in a large bowl mix together sour cream, mayonnaise, vinegar, salt, pepper, chopped green onion and blue cheese crumbles.  Add bacon and grapes, set aside.  When pasta is done, drain - BUT DO NOT DRAIN FULLY as you will use roughly 1/3 cup liquid to help thin out dressing.  Add cooked pasta to bowl and stir to combine, then add turkey - tossing to coat and thoroughly distribute.  Chill for at least four hours - enjoy!

Magi LUX bar - $16


Maple Marshmallows

I wanted to create a maple marshmallow initially to see if it would actually work.  Cooking to me is about taking a foundational recipe and expanding on it.  Here I simply took the ratio of corn syrup-sugar-water mixture that I boil to soft ball stage in my Vanilla-Bean Marshmallow recipe and switched it out with maple syrup (I prefer Burton's).  The end result is a decandent, homey treat for the Autumn and Winter months - paired well with hot cocoa.

1 - 1 oz. box unflavored gelatin
3/4 cup water
4 cups maple syrup
1 cup sugar
1 tbsp. vanilla-bean paste

In the bowl of an electric mixer with whisk attachment in add the box of unflavored gelatin and 3/4 cup water.  Whisk with a fork or whisk to combine - set aside.

In a 8 qt stockpot add maple syrup and sugar - bring to boil until it reaches soft ball stage (238-240 degrees) on a candy thermometer - remove from heat.  Watch carefully as the syrup is known to boil over. Set mixer bowl to necessary position and turn on medium-low speed. Slowly pour maple syrup into mixer down the side of the bowl so it has a chance to cool slightly.  Once mixture is all poured in slowly raise speed up to high and allow mixture to whip for roughly ten minutes.  Mixture should become light and airy - your mixer will work very hard.  Turn mixer off and add vanilla-bean paste - then turn mixer back and for roughly one more minute to incorporate.

Pour marshmallow into a 9X13 pan that has been well-oiled with an overlapping piece of parchment that has also been oiled.  You will also want to oil two silicone spatulas to get all of the marshmallow mixture out into the pan and then use your oiled spatula to even out the marshmallow.  Allow to set for six hours.

Remove from pan by pulling it up and out with the overlapping parchment.  Using an oiled knife, cut the marshmallows into squares and drop into powdered sugar so they do not stick to one another.  Enjoy!

Eggnog Cream Pies

Eggnog is a standard at my home during the entire Holiday season, but I wanted to do something different with it to inspire people to think of food in different ways.  Here I took one of my favorite drinks and turned it into a cream pie which I served in my faux bois cups.  It brought a festive look to the dessert table and allowed guests to walk around with their dessert - most people shared them.  I actually used store-prepared pie crust cut into quarters and then fit two of the quarters into the cups so that part of the crust draped over to create a rustic effect.  Some of the draped edges broke off during the baking process - I just ate those!  I prepared the dough with an eggwash and blind-baked them in the oven for 20 minutes until they were golden brown.  Allow them to cool completely before you add the filling.  You could easily do this with a pie pan, you would just need to fill the pan with pie beans to make sure your crust does not shrink too much during the blind baking process.  This recipe fills eight of my 10 oz. cups, you can half it if you choose.

Eggnong Cream Pie Filling
12 egg yolks
1 1/2 cup sugar
2 tbsp cup flour
2 cups milk
2 cups heavy whipping cream
1 tbsp. vanilla-bean paste
2 tsp. fresh-grated nutmeg
1/4 cup Remy XO, bourbon or brandy
4 cups heavy whipping cream - whipped (see note)

In the bowl of an electric mixer with the whisk attachment, beat egg yolks and sugar on medium high until thick and pale yellow, then add flour.  On the stovetop, in a large saucepan heat milk and cream to hot.  Add some of the cream mixture to the yolks to temper it - stirring with a whisk to combine.  Pour tempered mixture in with hot cream and gently whisk until mixture is thickened fully - about 5 minutes.  Remove from heat and add vanilla-bean paste, nutmeg and Remy XO.  Let mixture cool completely. 

To stablize my whipping cream, I add one package of unflavored gelatin.  To do this, sprinkle one package gelatin over one cup heavy cream in a liquid measuring cup.  Place into microwave and heat on high for one minute.  Stir with a fork to combine - place back into microwave and heat again for 30 seconds, then stir with a fork to combine.  You should see the gelatin dissolve at this point.  Place into the refrigerator to cool for 1.5 - 2 hours.  I then put this cream into the bowl of an electric mixer with the whisk attachment with the other three cups of chilled cream and whip to stiff peaks.  Once the yolk mixture has cooled, I then fold in the whipped cream and fill the cups with the mixture and let set for at least two hours.
