I was asked to cater for a wedding shower and I have a vintage wedding cake cookie cutter, so I decided to make some as favors. I had very little to go on for a theme aside from the fact that I was told 'black, white and red in a modern/contemporary style'. I thought 'this might be a challenge.' I decided an icing technique called feathering, where you drag the the icing and bring it together so as not to look like polka dots. When using royal icing, you have to be cautious to use a quality recipe and to not over saturate the cookie - otherwise you will comprimise the flavor. Here I used a vanilla bean sugar cookie (recipe is on the blog). The cookies were soft, not hard and carried the subtle flavor of vanilla without having an overwhelming sweet frosting.
