Brown Sugar & Herb Brine


2 cup kosher salt
1 cup brown sugar
5 bay leaves
4 tablespoons black pepper corns
2 tablespoon garlic powder
2 tablespoon rosemary
2 tablespoon rubbed sage
2 tablespoon coriander seeds

Dissolve brine in 2 quarts of boiling water. Once it is dissolved, add in 2 quarts more water. When the brine is cool, place in pot large enough to hold bird and pour brine in OR place in a sealable bag large enough to hold bird and pour brine into bag. Let bird sit in brine for 12-24 hours. Remove, rinse and roast normally.
