Sometimes it is the easiest things that provide the most satisfaction. Here the wallflower Cannellini Bean is paired with fresh herbs and garlic to become the star of the show. This recipe can easily be done with canned beans that have been drained (I would suggest 2 - 15 oz. cans) - I prefer to used dried beans that have been cooked in my Cuisinart Electronic Pressure cooker since they only take 22 minutes and they are done. Leftover beans can be snacked on or added to soups & salads as well.
1 lb. dried Cannellini beans - cooked and drained
1 head of garlic, chopped
2/3 cup olive oil
1/4 cup fresh oregano, chopped
1/4 cup fresh thyme, chopped
In a saucepan heat oil over medium low heat and add garlic, oregano and thyme - simmer for ten minutes, then add the beans and simmer for ten minutes. Turn off heat and let sit for one hour - serve.
