More Crumb Please Crumb Cakes


I love taking traditional things and making them into miniature which is easy to do with the help of USA Pans Mini Cake Pan.  

Crumb
1 1/2 cups dark brown sugar
1 1/2 cups all-purpose flour
1 tsp. cinnamon
1 tsp. freshly-ground nutmeg
1 cup unsalted butter, melted

Mix ingredients together in a bowl until crumbly and set aside.

Cake
3/4 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 tbsp. vanilla-bean paste
1 cup sour cream
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp. baking soda
1 tsp. salt
Confectioners Sugar for Sprinkling (optional)

Place butter and sugar in the bowl of an electric mixer and beat until creamed.  Add eggs, one at a time followed by vanilla-bean paste and sour cream, mixing until well combined.  Turn mixer off and add flour, baking powder, baking soda and salt.  Turn mixer on low and beat to combine ingredients.  Stir with a silicone spatula if necessary to make sure nothing settles to the bottom.

Prep two (2) 6-well USA Pans Mini-Cake pan by spraying with Bak-klene, divide batter between 9 wells and top with each well with 1/3 cup crumb.  Bake in a 350 degree preheated oven for 20-25 minutes, until a toothpick inserted comes out clean.  Enjoy!
