I was introduced to this country classic years ago and it is an all-time comfort food. Spooned warm from the pan into bowls with milk or cream poured over it - so delicious. Did I mention it's easy too?! It is essential to use quick-cooking oats as the old-fashioned variety will not work.
1 cup canola oil
2 cup milk or 1/2 & 1/2
4 eggs
1 tbsp + 1 tsp baking powder
2 tsp salt
1 tbsp. vanilla
1 tsp. cinnamon
6 c. quick-cooking oats
In a bowl mix together the oil, eggs, milk, vanilla, baking powder, salt, sugar and cinnamon - whisk together to combine well, then add the quick-cooking oats. Stir to incorporate and pour into a 9X13 pan that has been sprayed with Bak-klene. Bake in a 350 degree, preheated oven for 35 - 40 minutes - center may be slightly jiggly. Remove from oven and let rest ten minutes - serve!
