Savory Sweet Potatoes with Herbed Goat Cheese & Sage

Why not take the proverbial SWEET potato and make it savory?  By mixing mashed sweet potatoes with herbed goat cheese and fresh sage, then throwing it back in the oven to mix and mingle creates an amazing Autumn or Winter side dish.  Sweet potatoes can be cooked and mashed ahead of time, just bring out roughly a half hour before mixing to take the chill off.

6 sweet potatoes, peeled, cubed and cooked - then mashed
2 - 4 oz. packages herbed goat cheese
4 tbsp. (half stick) unsalted butter, melted
2 tbsp. fresh sage, chopped

Place mashed sweet potatoes into the large work bowl of a food processor fitted with the metal blade attachment.  Crumble goat cheese in with sweet potatoes, then add sage and melted butter.  Place cover on and pulse until mixture is smooth.  Place into a greased 3-4 qt. baking dish, then bake in a 350 degree oven for 30 minutes if the potatoes are freshly mashed.  If the potatoes were mashed a day before, then bake for one hour.  ALTERNATIVELY you can place a mixture of buttered bread crumbs on top before placing into the oven to add texture.  Remove from oven and let rest for ten minutes.  Enjoy!
