Herb & Pepper Goat Cheese Coins

Appetizers should be easy, not complicated since you are making so many individual portions.  Here I simply sliced a 11 oz. log of goat cheese ten equal portions then pressed the flat sized into a mixture of fresh herbs and  medium grind, fresh-cracked pepper.  Don't get frazzle about the goat cheese crumbling.  Make sure it's warm when you work with it, so you can form it together like spackle.  The key here is fresh-cracked pepper, not the pre-ground stuff in your cupboard.  The herbs were a poultry mix I purchased along with chives, chopped fine enough so you will get a mixture of them on your palate but not a paste.  I suggest chilling these forat least two hours before serving.

1 - 11 oz. log President goat cheese
1/2 c. chopped herbs, i.e. parsley, rosemary, thyme, sage, chives
1 tbsp. coarsely-ground, fresh-cracked pepper
