Roasted Garlic & Smoked Paprika Guacamole

I have a teenager that won't eat tomatoes or onions, yet will eat garlic all day long.  I had to come up with a guacamole recipe that was full of flavor and did not contain these very things I love to have in it.  Enter a whole head of roasted garlic, some smoked paprika and a smidge of hot red pepper flakes - assignment completed.

1 head garlic
1 tbsp. olive oil
1/2 tsp. sea salt
3 avocados
1/2 tsp. smoked paprika
1/4 tsp. hot red pepper flakes
juice of 1/4 lime

Place garlic in the middle of a square piece of foil, drizzle with the olive oil, then fold up the corners to seal the head inside.  Roast in a 375 degree oven for 30 minutes - remove and let cool.  Once cool, pull cloves from skin and place into a bowl - sprinkle with sea salt and mash with fork.

Halve avocados, deseed and skin them, finally scoring them into chunks with a knife and removing flesh with a spoon.  Place into bowl with garlic, then add red pepper flakes and lime juice.  Mash with a fork until you reach your person desired consistency - serve with chips!
