Nothing could be easier than hash for breakfast. It is hearty and satisfying, but most of all - it is versatile. You can mix and match any number of items; I try to limit it to four. Here I have fried up a pound of country sausage and paired it with potatoes and onions. This is the most basic pairing. I also topped it with a fried egg. Try and keep in mind that different vegetables require various cooking times. You need to allow for that, or cut vegetables that take longer to cook smaller so they will cook faster.
