Pizza - Calzone Dough

1/4 cup warm water
1 envelope (1/4 ounce) active dry yeast
3 tablespoons olive oil
1 tsp. sea salt
3 cups all-purpose flour

Place yeast in warm water to dissolve and proof. Put 2 cups flour, salt and olive oil into the bowl of a mixer with dough hook attachment and turn on medium. Watch the bottom of the bowl to see it come together and form a ball. If the dough is sticking to the bottom, add 1/2 cup flour and watch it for one minute to see if the dough comes together and starts to clean the bowl. If not, add 1/4 cup flour and watch again. Continue to do this until the dough stops sticking to the bottom and cleans the bowl.

Place in an olive-oil coated bowl and turn dough around to cover. Cover bowl with plastic wrap and put into a warm oven. I preheat an oven to 200 degrees, and then turn it off . Let rise for one or two hours.

Remove from bowl and use for recipe as desired.
