Ginger Beer (Ginger Ale)

Have you ever had homemade ginger beer, or as some would call it - ginger ale? Some things are truly best when made in the original version. Not only is this great tasting, but ginger is good for your digestive system. Here is how to do it!

Ginger Beer:
8 ounces of ginger, grated or sliced
8 cups water
2 cups light brown sugar
1 lime
Cold Club Soda

Using a vegetable peeler, peel the zest off of the lime and place into a pot.  Juice lime and place into the pot along with the peel. Regarding the ginger, you can either grate it using a microplace grater OR you can do a medium slice of it and put it in the pot, you do not have to peel the ginger.

Put remaining ingredients into the pot, bring to simmer and turn off heat. Let sit for 30 minutes, then strain. Put into refrigerator to chill. Fill a glass with ice, fill up halfway with ginger mixture and the other half with club soda. Stir to combine and enjoy! Alternatively you can pour mixed beer syrup and club soda (50/50 mix) into a bottle with stopper, chill and serve chilled.

    Thank you for this wonderful recipe! My husband is a ginger beer fan and was so impressed when I presented him with his first glass of fresh ginger ale. I chose to thinly slice the ginger as I was afraid grating might make it cloudy. Delightful...simple pleasures are the best.
