Maple Apple Pies

Sweet and simple - perfect for the upcoming holiday or dinner parties for guests to have portable food. You can also easily make these ahead, refrigerate or freeze them and then reheat them in a 200 degree oven - simple and easy!

Recipe makes 8 mini-pies
1 whole package pre-made pie dough
2 pink lady apples, peeled, cored and sliced
2 tbsp. unsalted butter
3 tbsp. sugar
1/2 tsp. cinnamon
2/3 cup apple butter
2 tsp. corn starch
1/2 cup chopped pecans
1 tbsp. maple syrup, plus more for garnish

Unroll one of the dough rounds and using a rolling pin, lightly roll out the round to accomodate four bottom crust cut-outs.  Then use your personal pie maker cutter to cut out four bottom rounds.  Set aside.

In a saute pan over medium-low heat saute sliced apples, butter, sugar and cinnamon for 7-10 minutes.  Using a slotted spoon, remove apples and set aside.  There will be liquid left over in the pan.

To the liquid left in the saute pan and apple butter and maple syrup - whisk to combine, then sprinkle cornstarch over top and whisk.   

Preheat your Breville personal pie maker and place a bottom crust round into each section using the stamper to make sure the crust is pressed into the form.  Working quickly, place 2 tbsp. apple butter mixture into each pie, then top with sliced apples.  Sprinkle with 1 tsp. chopped pecans.  Close top making sure it latches closed - cook for 8 minutes.  Remove pies gently using a butter knife or icing spatula.  Allow to rest for 5 minutes to set - then serve drizzled with maple syrup.
